These recipes are designed to be inexpensive and quick to prepare, requiring around 30-45 minutes of preparation.
Specifications for the ideal ingredients have been provided. When availability or cost prohibits use of fresh and unadulterated fruits and vegetables, I recommend using frozen varieties. Only high quality fresh meat should be used, because of quality concerns and because of potential hazards associated with consuming preserved or modified meat.

1. spaghetti alla puttanesca

"Puttanesca" means "lady's sauce." The myth associated with this popular dish is that lady entertainers designed to be prepared quickly in between meeting clients.
It is not customary in Italian cuisine to eat sauces featuring garlic with parmesan, but you can probably get away with it, if you really want.

  • 3 large fresh heirloom tomatoes, about 2 cups.
    tomatoes should have a strong sweet and astringent floral flavor, with a firm fleshy texture like meat. where high quality tomatoes are unavailable, cherry tomatoes are usually more flavorful with a better texture. where no fresh tomatoes are available canned whole peeled tomatoes such as cento brand will suffice.
  • 2 large cloves of garlic
  • about 15 fresh basil leaves or about 1/2 a cup
  • calabrian pepper or crushed red pepper
  • 2 tablespoons capers from a jar
  • 2 fillets of canned anchovy
  • 2 tablespoons black or green olives, diced
  • about 1/2 pound or 1/2 package cappellini or thin spaghetti
  • olive oil, salt and pepper
